Haven't cooked something new and elaborate for a long time, so... #todayTrimakes Meatballs in fragrant lemongrass coconut sauce, topped with lime zest. The meatballs are browned to have nice crust and simmered in the coconut milk sauce flavored with toasted whole warm spices: cinnamon, tumeric, coriander, ginger, shallots, cardamon, red chilli flakes. ๐Ÿš A perfect soul warming dish for the winter night.

It’s slightly more mild and citrus-like, but a little tingly. It’s commonly used in Japan for grilled chicken or eel, so it goes pretty well with duck breast. Ducks are corn fed, so I wanted to pair it with polenta. To cut through all the fat, the daikon oroshi (grated daikon radish) and the sauce gives a nice balance to the entire dish. The foie gras is seared. I had a huge craving for tonkatsu ramen with a rich and flavorful miso based broth. And let me tell you, did this ever hit the spot. ๐Ÿค— I used the broth from a pot of pork ribs and pork belly that had been simmering for several hours in a large pot the night before with onions, ginger, shiitake and woodear mushrooms. The meat had then been removed to braise in shoyu sauce with the mushrooms. I then reserved about 4 cups of this delicious pork broth. But before adding it into a separate pot, I first sautéed some minced garlic,  minced ginger and finely chopped scallions (the white part only & reserved the green part for toppings)  in a little bit of sesame oil until they were lightly browned. Then I added shoyu, dashi, mirin,  roasted sesame seeds that I grounded into a paste in mortar and pestle (which really intensified the broth flavour), miso paste, chili bean paste, and lastly the reserved pork broth and let it all simmer until the broth thickened and all the flavours infused. I added cooked ramen in a bowl, poured this rich delicious broth and topped it off with green scallions, shiitake mushrooms, woodear mushrooms, pickled  suey choy (pickled bamboo shoots are commonly used), pork slices & pork belly, nori and eggs (which were marinated in a mirin & shoyu sauce before adding it into the soup). Normally I would make the egg soft-boiled, but I had overcooked it this time around. It's all good though. I added extra chili paste in my bowl and a few extra drops of sesame oil. Chicken as my contribution for our group's Main Course Week๐ŸŽ„ โ—ฝ๏ธ Proving that you don't have to spend a lot to serve a delicious, healthy and beautiful Keto Holiday Main Course. This chicken was on sale for 97 cents/lb! Each one will easily serve 4 people (and can be made in your oven if you don't own an air fryer)!๐Ÿ‘ โ—ฝ๏ธ I first created a Keto/Low Carb stuffing by sauteeing 2 chopped onions and 2 cloves of garlic in @gathersuperfoods ghee, followed by 3 celery ribs. I then added a package of @foxhillkitchens croutons and 1 1/2 cups of chicken broth. To that I added salt, pepper, Rosemary and thyme. When the broth was fully absorbed and the mixture was cool I added two beaten eggs. I stuffed the bird and sealed the opening using toothpicks. โ—ฝ๏ธ This was enough stuffing for my bird, plus a full side dish for four! I coated the chicken with a mixture of @daksspices Original Red, garlic, salt, pepper, and parsley. Sprayed it with a bit of olive oil. I then air fried it in my @gowiseusa at 375F for 14 mins, carefully flipped it over, re-seasoned and cooked at 350 for 8 mins. Flipped one more time and cooked at 350F for 5 min. Proving that you don't have to spend a lot to serve a delicious, healthy and beautiful Keto Holiday Main Course. This chicken was on sale for 97 cents/lb!  Each one will easily serve 4 people (and can be made in your oven if you don't own an air fryer)!๐Ÿ‘

I first created a Keto/Low Carb stuffing by sauteeing 2 chopped onions and 2 cloves of garlic in @gathersuperfoods ghee, followed by 3 celery ribs. I then added a package of @foxhillkitchens croutons and 1 1/2 cups of chicken broth.  To that I added salt, pepper, Rosemary and thyme. When the broth was fully absorbed and the mixture was cool I added two beaten eggs. I stuffed the bird and sealed the opening using toothpicks.

This was enough stuffing for my bird, plus a full side dish for four!
I coated the chicken with a mixture of @daksspices Original Red, garlic, salt, pepper,  and parsley. Sprayed it with a bit of olive oil. I then air fried it in my @gowiseusa at 375F for 14 mins, carefully flipped it over, re-seasoned and cooked at 350 for 8 mins. Flipped one more time and cooked at 350F for 5 min. The house smelled great and the chicken and stuffing were moist and delicious!

Quickest paneer cutlets ever. Recipe: . Grated paneer- 1 cup Cheese - (optional) 1/4 cup Bread slices soaked in water - (excess water squeezed out) Chillies - 2 Garlic paste - 1 teaspoon Tandoori masala - 2 teaspoons Salt - to taste Coriander leaves - a handful. . Mix everything. Make 8- 10 cutlets. Apply a little pressure on the dough while making the cutlets to bind everything together. Let it rest for 5 minutes in the fridge. Deep fry till golden brown. . Note: if you're not using cheese, add an additional 1/4 cup paneer. The cutlets go well with black pepper yoghurt dip. You can check it out on my blog.

Quick Tatziki. Traditional ones are made with dill. I love adding mint to mine. Mainly because I'm not a fan of dill. It's great as a spread on toast, salads and as a dip with chips and vegetables. It's also great as a side with grilled chicken. Recipe: Hung curd- 1/2 cup Garlic- 1 clove smashed Lemin- 1/2 Mint leaves- as much or as little as you want. I use 3 tablespoons chopped mint Grates and strained cucumber- 1 cucumber, strained for 1 hour agleast. Salt & pepper. Mix everything together and refrigerate till required. You can use it immediately. I personally think refrigerating it brings all the flavours together. Note: Straining the cucumber is necessary for a thick spread. To speed up the process, you can sprinkle some salt over the grated cucumber. This dip was my go to when I was controlling my diet. It is flavour packed and can be refrigerated for up to 5-6 days. Start off with 1/2 cloves of garlic. Since it's raw, the flavour is really strong. The flavour develops even more when refrigerated.
