Hi ! If you follow me, you might know that I take part to the opening of a new bakery & kitchen in Singapore @microbakerykitchen ! Such an exciting project with talented bakers and cooks ๐Ÿ‘Œ๐Ÿ‘ŒToday was the soft opening and I spent the day testing and baking so many goodies .. the only thing I was craving for back home was a green soup ๐Ÿ˜ŠSo I made this one with what was in my fridge : zucchini, leeks, peas, thyme and basil ๐ŸŒฟ. Added some parmesan and toasted pine nuts ( can swap parmesan for ๐ŸŒฑ parmesan for vegan option). My friend and I @bethmalatji are really considering going vegan and these are not my last words ๐Ÿคฃ๐Ÿคฃ So as teaser I made this all raw vegan zero carbs salad with grilled plums for sweetness, a sweet mustard dressing and vegan cheese. I used caulirice instead of couscous with broccoli and kale from @woolworths_sa, thanks for the convenience, with some sugar snap peas, strips of raw beetroot and created a killer dressing and for crunch just sprinkled some nuts on top of the salad. Happily it's friday and even the sun shows up ๐Ÿ’ซ๐Ÿ’•๐Ÿ’ƒFestive quinoasalad with grilled red cabbage steaks. ๐Ÿ’œ The red cabbage slices I brushed with olive oil and balsamico vinegar and grilled them 30 min at 200 degr in the oven. Meanwhile stir fried carrot slices and cooked 150 quinoa (2 pers.). For the quinoa I chopped a spring onion and added 2 tbsp soya, a squeeze of lemon and some pepper. For the dressing I used 1 garlic glove, 2 tbsp tahin, 1 tsp soya, 3 tbsp water 1/2 tsp agave syrup, 1 tbsp applecider and some salt. Als topping some green from my little herb garden, roasted nuts, sliced spring onion and some fresh pepper. J'ai fait revenir un oignon, un ail, des pommes de terre et des dés de jambon Serrano avec du sel, du poivre et du paprika et j'ai rajouté un œuf dur coupé en dés. Voilà. . I was so damn proud of myself for making dairy free and gluten free corn fritters. Especially after a failed attempt using coconut flour (that shit absorbs about 8 times its volume in liquid ๐Ÿคฆ‍โ™€๏ธ). So I sent a "I'm so proud of my fritters" photo to my Arbonne consultant, just to find corn is on the "no" list. FM. Anyway, I ate them, loaded with lettuce, tomato, onion, avocado, smoked salmon and chilli. And I enjoyed it. I’ve just come to the realisation that I’m a ‘on the fly’ cook! This is highly due to the fact I do nearly all my fresh produce shopping at the farmers market, buying local and in season fruit n veg (the best)! I enjoy coming up with creations from what I’ve bought each week rather than planning every night in advance... but believe me, they don’t always work out! I’m lucky enough that this one did... end of week (what’s still left) pasta! Curried Turnip, Radish & Carrot Soup (V-GF) ๐Ÿ”ฅ๐ŸŒฟ. [English below] A estas alturas sabrás que soy una enamorada de las cremas y que mi favorita es la de zanahorias. Hoy te traigo una variación con un toque de curry: zanahorias, nabo y rábanos, una delicia. ¡Feliz viernes! ¿Qué necesitas? โœจ 3 zanahorias. โœจ 1 taza de leche de coco. โœจ 1 puerro picado. โœจ 1 nabo. โœจ 2-3 rabanitos. โœจ 1 taza de caldo de verduras. โœจ 1 trocito de jengibre. โœจ Una cucharadita de curry en polvo. โœจ Sal, pimienta y AOVE. โœจ Toppings: rabanitos y chili en polvo. ๐ŸŒฟ Calienta una cacerola con un chorrito de aceite y pocha el puerro picadito junto el jengibre. ๐ŸŒฟ Mientras pela y trocea las zanahorias, el nabo y los rabanitos. What do you need?
