Can't remember when was the last time I visited an American Diner. It's probably Dan Ryan's many eons ago. Maybe it was due to the sheer size of some of those meals I had while I was on a work trip to Texas many decades ago that put me off American food altogether - meals that are fit for a sumo wrestler... As we needed a quick bite before going for our play at the Esplanade Theatre so @thebarefootfoodie suggested we dine at Mischief, an American diner! Guess this was a chance for American food to redeem itself from my scared memory. 😅 Surprisingly the quality of food was not bad at all and the speed at which the meals were served! The pork belly with a green spicy tangy chimichurri sauce was so crackling good! And the roasted spring chicken was tender and juicy. I'm salivating again just looking at these pictures now. Ok so the nachos with the cheese sauce was just ordinary. They offer a discount on their food items if you have tickets to prove that you are patrons of Esplanade shows. Surprisingly the quality of food was not bad at all and the speed at which the meals were served! The pork belly with a green spicy tangy chimichurri sauce was so crackling good! Apparently missed the national margarita day, but managed to fit in tongue tacos on homemade flour tortillas with avocado, cilantro, onion, and lime. Plus salsa. None of which are pictured. You'll just have to trust me on that. All delicious.

Zu Beginn meiner Therapie 2015 stand fest: ich bin mehr als XX Kilo von einem gesunden Gewicht entfernt [ich verzichte hier bewusst auf genaue Zahlen]. Mehr als XX Kilo die ich zunehmen sollte. Unvorstellbar. egal ob 10kg oder 1kg: wenn man in einer Essstörung oder in einem Kampf mit seinem Körper steckt ist jedes Kilo mehr eine Qual. . In meiner Therapie haben wir uns nicht auf das Endziel konzentriert, sondern auf die kleinen Schritte: die Wochenziele. Und das ist worauf es kommt: die „kleinen“ täglichen Schritte und Erfolge, die dich voran bringen. . Ja, es ist wichtig sein Ziel immer im Hinterkopf zu behalten, um zu wissen in welche Richtung es gehen soll. Ich denke gerne groß. Aber manchmal macht es Angst und hält uns auf. Also warum nicht auf die kleinen Ziele konzentrieren, die weniger Angst machen, realistischer und schneller umsetzbar sind und uns täglich kleine und doch große Erfolge feiern lassen? Baby Parmesan Hassleback Potatoes! 🥔🥔🥔 One of my favorite new side dishes is "hasslebacked" baking potatoes. But, the other day, I wondered, why couldn't I hassleback my favorite baby potatoes? So I decided to try it. It turned out to be easy, delicious and what could be more fun that adorable little bite-sized hassleback potatoes? Here are the super easy steps: Wash some baby potatoes. Slice a little off the bottom of each one (this will be your base). Grab two kabob sticks, and set a baby potato in between them. Slice every 1/8 inch, creating the hassleback effect (the skewers will keep the knife from cutting all the way through the potatoes). Repeat for all potatoes. Let soak in cold water for 15 or 20 minutes. Remove potatoes and place on a baking sheet. Drizzle with olive oil. Roll your potatoes around in the oil to evenly coat each. Generously sprinkle with salt and pepper. Bake for 25 to 30 minutes. Remove from oven. Sprinkle with grated parmesan and return to oven to let cheese melt. Remove after a few minutes. Finished potatoes should be soft with a bit of browning on the bottom. Sprinkle your sliced greens onions or chives on top. So I decided to try it. It turned out to be easy, delicious and what could be more fun that adorable little bite-sized hassleback potatoes?

Back from a recent trip to LA and here I am, in the kitchen again🤷‍♀️We’re gonna continue #hercookbookclub @food52 Genius Desserts bake-along😎 Two-Ingredient Sweet Potato Frosting 🍫 I was really excited to try this recipe (literally just chocolate mixed with sweet potato purée), but sadly I don’t like the taste. 😣Tried to add more ingredients to make it work (really don’t wanna waste my @valrhonausa chocolate bar), but had to throw out the whole thing eventually😭 Hope your weekend baking projects are more successful than mine! 👩‍🍳

Smokey Mushroom Sauce 2 cups mushrooms (I used button and oyster) - chopped 150ml almond cream (but feel free to use soy or oat if you want) 1 tsp smoked sweet paprika 1/4 tsp chili (or as much you can tolerate) 1 tsp maple syrup 2 spring onions (or 1 scallion) - chopped Small bunch of parsley - minced 2 tsp naturally brewed soy sauce or liquid aminos Extra Virgin Olive Oil for sautéing and seasoning in the end Salt to taste Freshly ground pepper Baby tomatoes Method: • Heat the oven on 180 Celsius and put the washed tomatoes to roast, for 10-15 minutes until softened and crinkled. • Sauté onions with spices and pinch of salt on olive oil until wilted and fragrant, add maple syrup and shortly after the mushrooms. • Keep sautéing. Add some pepper and soy sauce, then the cream • keep cooking for a few minutes on low flame. 2 spring onions (or 1 scallion) - chopped

Method:

• Keep sautéing. Add some pepper and soy sauce, then the cream
• keep cooking for a few minutes on low flame. Taste and if needed add more salt. • mix in the cooked pasta and parsley, season with some more olive oil and top with roasted tomatoes...heaven😍

Went on a bit of an experiment here... a healthy but filling, feel-good lunch: baked sweet potato topped with grilled ganoushed eggplant, topped with yoghurt, paprika and pomegranate! A super mix of sweet and savoury. Recipe below 👇🏽👇🏽👇🏽 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients: 2 large sweet potatoes 2 large eggplants 1 tbsp tahini Salt Pepper Paprika Garlic Yoghurt Pomegranate Fresh lemon Olive oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀ . . Prep: Heat the oven to 180 degrees Celsius ⠀⠀⠀⠀⠀⠀⠀⠀⠀ . . Method: 1. Wash and peel the sweet potatoes, slice them in half and place them facing up on foil covered baking tray. 2. Spray olive oil over them, and poke fork holes around them. 3. Slice the eggplant vertically (from top to bottom) in quarters. If you bought the skinny eggplants then just slice them vertically in half. 4. Place the eggplant facing up on the baking tray, beside the potatoes, and spray your olive oil on them too 5. The oven should be fired up and ready to go. Bake the potatoes for 30mins, and the eggplant should be ready in 15mins. 6. Once the eggplant is tender, remove from the oven and place it on a plate. 7. Scrape the meat off the eggplant into a bowl, leaving the skin aside (I cut the skin into quarters and added them back in the oven to make it a crispy garnish) 8. With the eggplant meat, mash it up and strain the excess water. It should be a thick purée. 9. Add the tahini, salt, pepper, 1 tbsp of olive oil, garlic, and lemon juice to the mix. Add a bit of spice if you wish. Mix thoroughly. 10. Once the ganoush is done, set aside until the potatoes are crispy on the outside but soft on the inside. 11. With the freshly baked potatoes, set aside to cool. Then, gently spoon through the top layer of the potatoes to create space for the ganoush and toppings to sit. 12. Gently place the ganoush on the potatoes, and top it off with yoghurt and pomegranate. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Serve hot! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ xxx Enjoy!

What do you do when you need treats for a friend’s birthday who is off refined sugar? You make these luscious chocolate almond truffles from @gkstories’s blog. I made some small changes but mostly stuck to the perfect portions of their recipe. In my version I lightly toasted the almonds, used instant coffee and vanilla extract instead of cinnamon. It was my first time trying them and I was so pleased with the taste. I made kesar kheer (saffron rice pudding) for the first time. It turned out amazing and I loved the flavour of saffron and rose water. See recipe below! Follow @shabhatia Recipe - 1/4 cup basmati rice - 1 litre milk - Around 10 pieces each of cashews, almonds and pistachios cut or pressed into small pieces. - ~ 40 strands of saffron soaked in 2 tbsp milk - 1/4 cup sugar, add more to taste - 1 tsp cardamom powder - 2 tbsp rose water (optional) First, soak rice in water for about 30 minutes. Separately soak saffron in warm milk and prepare dry fruits. Then boil milk in a pan and add presoaked rice. Let it mix for about 10 minutes at medium heat until rice is puffed up. Keep stirring from time to time to avoid milk and rice from sticking to the pan. Add dry fruit mix and let it further mix for another 10 min. Once thickened, add saffron milk and cardamom powder and mix for another 10 min. Once ready, add sugar and mix for 2 to 3 min. Turn off the heat. Let it sit and cool. Add rose water and mix. Happy weekend friends! I’m coming at you with yet another recipe, this time for this super simple yet delicious CHOCOLATE CHIA PUDDING. It comes together in just 3 minutes, requires only a handful of ingredients and is the perfect breakfast to start off your weekend with. It’s not too sweet, but not bland either, nice and chocolaty and dangerously creamy. I hope you give it a try! Also, how has your week been? Mine’s been quite busy actually, I’m working hard on getting more recipes your way and trying to improve my photography and food styling. Let’s chat ❤️ Serves 1 Ingredients: 2 1/2 Tbsp chia seeds 1 Tbsp cacao powder (I used raw cacao powder) 3/4 C plant milk (I used soy for some extra protein and creaminess) 1/4 C unsweetened yoghurt (I used soy yoghurt) 1 1/2 Tbsp maple syrup Instructions: 1. To a medium bowl add chia seeds, cacao powder and 1/2 C plant milk. 2. Stir until thoroughly combined, then add the remaining 1/4 C plant milk, yoghurt and maple syrup, and stir again. 3. Cover the bowl and refrigerate overnight. 4. In the morning, remove chia pudding from the fridge and serve with toppings of choice.

CREAMY BEAN GOULASH. This meal is not only vegan, but also high protein, gluten-free and super easy and affordable to make. All you need is some basic ingredients and a love for delicious for food. When I was younger my dad would regularly make bean goulash for us, mostly when my mom wasn’t home because she’s intolerant to beans, and I used to absolutely love it. His version uses sausages and salami as well as sour cream though, so obviously once I went vegan it was a no-go for me. But when I recently started craving this meal again I set out to veganize it and I’m honestly so happy with the result and super eager to share the recipe with you! I hope you like it as much as I do 😊 Serves 4 Ingredients: 1 tsp olive oil 1 large onion, finely chopped 3 1/2 C vegetable broth 2.5 Tbsp sweet paprika powder 1/4 C + 1 Tbsp tomato paste 1/2 tsp salt A few cracks of pepper 1 bay leaf 2 Tbsp dried marjoram 1 400g can EACH kidney, borlotti and butter beans, drained and rinsed 1 150g can of corn, drained and rinsed 3 medium potatoes, diced into 1/2” pieces 1/2 C soy yoghurt Instructions: 1. Heat a large pot over medium heat. Once hot add olive oil and onion, turn off heat and stir for around 30 seconds. 2. Cover the pot and remove it from the stove top. Let steam for 5 minutes. 3. ♥️ Gooey Sweet Potato Skillet Brownie ⏲ Under 30 mins | Serves 4 Happy #ValentinesDay to you all! 🥰 Hope you are spending the day with your friends, family, significant other, or some self-love 💕 I will be spending it enjoying this DELICIOUS Sweet Potato Brownie 😍 Like DANG y’all...this is the gooiest brownie I have ever had & I am lovin’ every bite of it 🤩 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Recipe📝 Wet Ingredients: ▫️3/4 Medium Sweet Potato ▫️1 Pastured Brown Egg (@vitalfarms) ▫️1 tsp Vanilla Extract ▫️1 tbsp Honey ▫️1 tbsp Coconut Oil (@vitacoco) ▫️1/4 cup Almond Butter (@maranathanutbutters) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Dry Ingredients: ▫️1/4 cup Cocoa Powder (@hersheys) ▫️1/2 tsp Baking Soda ▫️1 tbsp Almond Flour (@natureseats) ▫️Pinch of Salt ▫️Semi-Sweet Mini Chocolate Chips (@enjoylifefoods) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Icing: ▫️1/4 Medium Sweet Potato ▫️1 cup Powdered Sugar ▫️1/4 Cocoa Powder ▫️1/2 tsp Vanilla Extract ▫️3-4 drops Red Food Coloring ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Preheat oven to 425°. Add your whole medium sized sweet potato (I like to cut it in half so it’s easier to cook evenly). Roast in the oven for 45 mins. Once the SP is ready, cut 3/4 of it (saving the other 1/4 for the icing). Add to a blender, along with all the other wet ingredients. Blend until there are no lumps (this just helps to easily purée the SP rather than mashing it yourself). Lower the oven to 350°. In a bowl, evenly mix together all your dry ingredients except the chocolate chips. Then mix in the wet ingredients. Lastly, add in as many chocolate chips as you’d like. The batter is now ready! Pour into a 6.5” skillet (or any baking dish) & spread evenly. Cook in the oven for 20-25 mins. This will allow the center to be super moist & gooey 🤤 While that’s cooking, blend all your ingredients for the icing in your blender. Add to a piping bag so it’s ready to go! Once the brownie has cooked, allow it to cool for 15 mins before icing it. I made a heart shape with the icing & sprinkled on some freeze dried raspberries for a pop of color ♥️ Enjoy with some vanilla bean ice cream & eat straight from the skillet! 😋 {Recipe video tutorial in story highlights}

Preheat oven to 425°. Add your whole medium sized sweet potato (I like to cut it in half so it’s easier to cook evenly). Roast in the oven for 45 mins.
Once the SP is ready, cut 3/4 of it (saving the other 1/4 for the icing). Add to a blender, along with all the other wet ingredients. Blend until there are no lumps (this just helps to easily purée the SP rather than mashing it yourself).
Lower the oven to 350°.
In a bowl, evenly mix together all your dry ingredients except the chocolate chips. Then mix in the wet ingredients. Lastly, add in as many chocolate chips as you’d like.
The batter is now ready! Pour into a 6.5” skillet (or any baking dish) & spread evenly.
Cook in the oven for 20-25 mins. This will allow the center to be super moist & gooey 🤤
While that’s cooking, blend all your ingredients for the icing in your blender. Add to a piping bag so it’s ready to go!
Once the brownie has cooked, allow it to cool for 15 mins before icing it.
I made a heart shape with the icing & sprinkled on some freeze dried raspberries for a pop of color ♥️
Enjoy with some vanilla bean ice cream & eat straight from the skillet! 😋

Yesterday I made up my mind and decided that I was going yo try my hand at some whole grain spelt cinnamon rolls today, so that’s exactly what’s been going down this morning. HEALTHY ONE-POT VEGAN BOLOGNESE SAUCE. Have I got your attention? You know, I’ve craved a nice and hearty bowl of bolognese more than once and making an only vegetable version, sans the meat, just doesn’t satisfy that need for me. So I set out to make a “meaty” vegan bolognese, and with the help of my grandpa this was the result. Hope you like it as much as I do 😊 Serves 4 Ingredients: 1 tsp olive oil 1 medium onion, finely chopped 2 carrots, finely diced (about 5mm/ 1/5” pieces) 1 red bell pepper, finely diced (about 5 mm/ 1/5” pieces) 1 rib of celery, finely diced (about 5mm/ 1/5” pieces) 1 tsp salt 400g vegan minced “meat” 1/4C tomato paste 750g tomato sauce 1 - 1 1/2 C vegetable broth, depending on desired consistency A few cracks of pepper 1 Tbsp herbes de provence Instructions: 1. Tested one of the meals my grandpa made for me whilst in Sweden, and it worked out perfectly, meaning that I can, as promised, finally share the recipe for this hearty and nourishing soup. It comes together in about 40 minutes (chopping and all) and requires only a couple of very basic ingredients. Hope you like it as much as I do 😊 Serves 4 Ingredients: 1 tsp olive oil 1 medium onion chopped finely 4 medium potatoes diced into 3/4 inch pieces 1/2 leek chopped finely 1/4 C + 2 Tbsp tomato sauce 5 C vegetable broth 1 tsp salt 1 Tbsp ground cumin (optional) 1 C red lentils 3 handfuls spinach roughly chopped A few squeezes of lemon juice (optional) Instructions: 1. After a fun two weeks in Malmö, today is the day mum and I travel back home to Switzerland. It’s been nice and we’ve had a great time, hut I’m looking forward to getting home, seeing Milly and dad, and getting back to work with my recipes, food styling and photography. I hadn’t either up until today when my grandpa had whipped up these babies while I was still asleep. It was unusual but I’m not complaining because that meant I got to taste test some for breakfast. Lentil soup anyone? Got my gramps to cook lunch for me today and was served this delicious bowl of lentil soup. I’ve already asked him how he made it and from what I gather it’s super simple. I’ll try to remake it soon and will then let you know the recipe. Does that sound good? As far as photography and cooking is concerned I must say it’s quite difficult being without all my ingredients and my usual photography setup, so apologies if the quality and variety of my post lags behind a little these upcoming 2 weeks. Of course I’ll do my best not to let the circumstances impact my work too much, but I just wanted to warn you and put it out there. Anyway, we’re soon off grocery shopping and the like, so I’ll leave you for now and talk to you later in my stories 😊😘

COCONUT CHIA PUDDING Yesterday we figured out a tasty way to get in a good dose of greens at breakfast, and today it’s omega 3s we’re tackling. Up until this morning I had never had chia pudding and I was convinced I would never like it. Well, turns out I was wrong, because this recipe is a keeper. So, if you are yet to give chia pudding a shot, too, give this recipe a chance and let me know what you think. Deal? Serves 3 Ingredients: • 6 Tbsp chia seeds • 1 1/2 C plant milk (I used soy) • 3/4 C coconut milk • 1 Tbsp liquid sweetener, + more to taste (I opted for agave syrup as it doesn’t have as much of an intrinsic flavor as maple syrup does) Instructions: 1. Add all ingredients to a bowl and stir well. 2. Once everything is thoroughly combined, refrigerate overnight. 3. In the morning transfer the pudding to three glasses or bowls and top with whatever your heart desires. 4. Enjoy!

I hope you like it as much as I do! 1. Add all ingredients, apart from the protein powder, if using, to a saucepan, stir well, and bring to a boil over medium-high heat.
2. Once boiling, reduce heat to medium-low.
3. Cook, stirring frequently, until you reach desired consistency. If making protein oatmeal, cook until just under desired consistency, then remove from heat and stir in protein powder.
4. Top with whatever your heart desires.
5. Dig in! *While I haven’t tried it, you may try substituting the coconut sugar with 1 Tbsp regular sugar or 1 Tbsp maple syrup

They’re high in fiber, magnesium, potassium, antioxidants, vitamin E, B, C etc. and high up on the “yumm-scale”. On top of that they’re ready in just 5 - 10 minutes, so you have no excuse not to make them. Let me know if you try them and don’t forget to tag me - I’d love to see your creations! Hi, I’m coming at you once more today, and this time I’ve got a bomb recipe for you. Ever had sweet potato bread? Well, if not, now’s the time. It’s healthy, sweet, moist, absolutely delicious, and all you need is 6 simple ingredients! Sounds good? Good. One last note though, if you want a higher, more bread shaped loaf, I recommend doubling the recipe, OR stuffing half your loaf pan with aluminium/cooking foil and lining the other half with baking paper. Alright, let’s get to it: Ingredients: • 2 medium Sweet potatoes (around 400g) • 1 C Whole grain spelt flour (I am yet to try other flours, and will let you know when I do) • 2 tsp Baking powder • Pinch of salt • 2 Tbsp Maple syrup • 1/3 C Almond butter Instructions: 1. Begin by heating your oven to 200 degrees Celcius and washing and drying your sweet potatoes. Then halve them lengthwise and place on a baking tray with baking paper, cut side down. 2. Bake the sweet potatoes until they begin to seep and release their juices, about 30 minutes. 3. In the meantime, in a large mixing bowl, combine flour, salt and baking powder. 4. Once the sweet potatoes are done, remove them from the oven, reduce heat to 180 degrees, and let the potatoes cool slightly, before cutting into thirds and transferring to a blender or food processor. The sweet potatoes should weigh about 360g. 5. Blend until smooth, then add maple syrup and almond butter and blend again. 6. Add the sweet potato, maple syrup, almond butter mixture to the dry ingredients and stir to combine thoroughly. 7. Spray a loaf pan with cooking spray (or see note above for a “half-pan version”)and pour in the batter. 8. Bake for 40 minutes, or until the top is slightly browned and a stick inserted comes out clean. 9. Once done, remove from the oven, cool in the pan for 5 minutes, and finally transfer to a cooling rack to cool fully. 10. Hi, I’m coming at you once more today, and this time I’ve got a bomb recipe for you. Ever had sweet potato bread? Well, if not, now’s the time. It’s healthy, sweet, moist, absolutely delicious, and all you need is 6 simple ingredients! Sounds good? Good. One last note though, if you want a higher, more bread shaped loaf, I recommend doubling the recipe, OR stuffing half your loaf pan with aluminium/cooking foil and lining the other half with baking paper. Alright, let’s get to it:

Ingredients:
• 2 medium Sweet potatoes (around 400g)
• 1 C Whole grain spelt flour (I am yet to try other flours, and will let you know when I do)
• 2 tsp Baking powder
• Pinch of salt
• 2 Tbsp Maple syrup
• 1/3 C Almond butter

Instructions:
1. Begin by heating your oven to 200 degrees Celcius and washing and drying your sweet potatoes. Then halve them lengthwise and place on a baking tray with baking paper, cut side down.
2. Bake the sweet potatoes until they begin to seep and release their juices, about 30 minutes.
3. In the meantime, in a large mixing bowl, combine flour, salt and baking powder.
4. Once the sweet potatoes are done, remove them from the oven, reduce heat to 180 degrees, and let the potatoes cool slightly, before cutting into thirds and transferring to a blender or food processor. The sweet potatoes should weigh about 360g.
5. Blend until smooth, then add maple syrup and almond butter and blend again.
6. Add the sweet potato, maple syrup, almond butter mixture to the dry ingredients and stir to combine thoroughly. 
7. Spray a loaf pan with cooking spray (or see note above for a “half-pan version”)and pour in the batter.
8. Bake for 40 minutes, or until the top is slightly browned and a stick inserted comes out clean.
9. Once done, remove from the oven, cool in the pan for 5 minutes, and finally transfer to a cooling rack to cool fully.
