📚I'm already tired from my 1st week back at school but am ready and excited to take on a new set of courses! 🥣 This vegetable soup has a lil twist... added almond butter for some extra flavour + a dose of healthy fat! I adapted this recipe from one I found in a Longo's magazine. I first sautéed some chopped onion, carrots & celery in a few tbsp of vegetable broth. Then added in chopped sweet potato & swiss chard stems. Sautéed a little before adding in chopped bell pepper & zucchini. Sautéed a little more... (add tbsp of vegetable broth as needed throughout the sautéeing). Then added in garlic, ginger, cumin, smoked paprika, salt & pepper stirring to coat. Once coated I added in almond butter (about 1 tbsp per serving), diced tomatos, vegetable broth & let simmered until the vegetables were cooked to my liking. Stirred in the swiss chard leaves during the last few minutes of cooking. Top with sliced almonds and enjoy (especially on a cold day❄)!

I have a smoothie for you! And it tastes like hot chocolate AND you can eat it with a spoon... I hope you enjoy this vegan & gluten-free hot chocolate smoothie bowl that you can top with whatever your heart desires. Might I suggest banana, coconut, granola, cacao nibs, and nut butter? Definitely a winner. Ingredients 1 cup (240 ml) unsweetened almond milk 1 Tbsp (16 g) nut butter OR dairy-free chocolate chips 1 scoop chocolate Complete 1/2 cup (40 g) rolled oats 1/2 tsp vanilla extract Directions The night before, add all ingredients (except chocolate chips, if using) to the bowl of your blender and give it a stir to ensure that everything is well combined. Cover and place in fridge for at least 3 hours, preferably overnight. This step isn't absolutely necessary, but allowing the oats to soak for a few hours will make them easier to blend and give you a smoother, creamier smoothie.** When ready to eat, blend on high until oats are fully broken down and a smooth and creamy consistency is reached. Transfer the smoothie to a small saucepan set over medium heat (adding chocolate chips, if using) and bring to a simmer or boil, depending on how hot you want it. If the smoothie is too thick, add an extra splash of almond milk until desired consistency is reached. parsnip bolognese 🍝 . . . for the bolognese I threw the following into my pressure cooker for 30m: - ground beef (80-85% lean) - San marzano canned tomatoes - ketchup - salt, pepper, cumin, garlic, ginger for the poodles (parsnip noodles) I just used two medium sized parsnips and used a peeler to make long thin strips and threw it in some olive oil (cooks way faster than normal pasta)

Quinoa is one of my most valuable pantry staples! Fun fact: it’s technically a seed, not a grain. 🤯 It’s got protein, fiber, iron, zinc & all kinds of other fun stuff. Here’s how to cook it: Use a 1:2 ratio of dry quinoa to water. Rinse quinoa, then add it with water to a saucepan. Bring to a boil, cover, put heat on low, and cook for 15 minutes. Fluff with a fork! Quinoa is one of my most valuable pantry staples! Fun fact: it’s technically a seed, not a grain. 🤯 It’s got protein, fiber, iron, zinc & all kinds of other fun stuff.

Here’s how to cook it: Use a 1:2 ratio of dry quinoa to water. Rinse quinoa, then add it with water to a saucepan. Bring to a boil, cover, put heat on low, and cook for 15 minutes. Fluff with a fork!

I saw this sign on the restaurant next to my gym and it couldn’t be more accurate. It took me a very long time to understand and admit to myself how much of an effect what I put into my body has on it. Inside and out. Since I started eating a mostly Paleo diet, I was able to lose post-surgery weight and keep it off. I splurged over the holidays and jumped right back into putting meaningful foods into my body and I’m definitely excited about it. I missed feeling good. Just eliminating processed sugar, grains and most dairy had such a significant impact on my body and mind. Intentional eating is so important and is most relevant with achieving fitness goals! Cooking has become one of my favorite hobbies and there’s so many great and easy recipes. I have fun with it! Im not a big fan of all tofu but I confess: I’m totally a fan of extra firm tofu that has been grilled, stir-fried or actually firm tofu cooked any way. It creates a great flavorful crust texture that takes it to another level. Even Kennedy likes it! Tofu offers a double dose of fatigue-fighting power and is great source of plant-based protein, which helps steady blood sugars and provides the body with a sustained source of energy. During the week I generally wake up around 4:45am to start my day. Fueling my body properly is essential to help me not “hit that wall” around 3:00pm desperately needing a nap. Between Personal training, Teaching fitness classes, being a private chef and mother of a rambunctious five year old....ain’t nobody got time to nap! 🤣. Knowing that Tofu is an excellent energy boosting food.... I created a bunch of FLAVORFUL go-to, easy meals. Like I promised! I've came up with a super rich, delicious Tumeric Latte! I decided to call this "Super Rich Golden Tumeric Latte" 😍💛💛 I love how rich it came out and how it tastes 🤩. Honestly I've never tried anything "Tumeric" before, and I think this @moodbeli Golden Tumeric Powder is awesome, because it's not super strong, since it's also mixed with ginger and cardamom 😘. So I think if you want to easy into it this may be a good start 😁. I loved every sip of it! First time I tried making it it didn't turn out too well, but today I got it on point 🙏🏼. Tumeric is helpful in indigestion, and easing joint pain. 🤗 (I've also heard that it can be good for inflammation 🤔) Thank you @moodbeli ! This recipe makes 2 full cups ☕️☕️ . . That’s when I knew I was ready to break my fast. 💧 But now, I’m truly not hungry. I have water and the rumbles subside and I feel good. This chart definitely helps me understand the difference between being hungry and wanting to eat. This morning I really fueled my day in the perfect way. I’ve had a massive shift so far and would have felt awful if I didn’t have such an awesome breakfast. Plenty of protein, fibre, iron, and other vitamins and minerals. ❤️ it’s oats! 1/2 a cup of oats, 1 cup of water - boil it. Topped with the freshest blood plumb and a yellow peach. So packed full of other nutrients and lots of antioxidants 💜🧡. Garnished with a little bit of dedicated coconut and some almond milk for healthy fats and calcium from the almonds. 💚💚 Now some nuts for a snack and a big salad for lunch, packed with heaps of goodies including grated raw beetroot 💜💜 loving my purple fruit and vegetables right now 🤩 This food is so easy to make #healthylifestyle #healthyfood #breakfast #healthyvegan #health #food #vegan #veganfood #healthyrecipes #fruit #oats

If you didn’t know, I work at a restaurant close to home Wed-Sat. Do you know how hard it is to stay healthy at a world famous BBQ joint? ITS FREAKING HARD. + + The French fries are the best worst thing. They’re so easy to grab here and there and you don’t notice how often you mindlessly eat while working. Lets talk skin food! I know a lot of us currently, or in the past, suffer with skin issues. People are so quick to jump on spending tons of money on skincare products that, in reality, typically cause us more harm than good. I can’t express enough, that the cheapest, most effective form of skincare, is our diet. You are what you eat - therefore, we have to nourish from the inside out. There are a couple micro/macronutrients that are incredibly important to skin health including omega-3 fatty acids, protein, antioxidants such as caretonoids, and vitamins E & C (to name a few). One way I like to get in all of these important nutrients is in a super yummy smoothie! Quick, painless, & you can take it on the go! Here’s one of my favorite skin nourishing smoothie recipes! Also! Don’t overcomplicate your food. Smoothie bowls can totally be beautifully colored & have all the amazing toppings, but they aren’t necessary! Day 4 of sticking with my portion containers 🙌. . Nutrition will always be my biggest struggle, and I need to be super intentional with my food choices. I’ve made a commitment to myself that, for the duration of this program, I will be consistently following the meal plan & using my containers. . Instead of saying “I can’t eat healthy”, I’m saying I CAN & I WILL. That mindset is key for me to accomplish my goals.
