🍌 Caramelized upside-down banana muffins🍌 . . I told you I was literally obsessed with upside-down cakes 🙈. Those caramelized muffins are BOMB!!! The dough is 💯 Healthy so why not having fun on the toppings, right? I could not stop eating it! It is one of those recipes you are proud of and so happy to share. Serve them warm if you can... But I promise you'll eat all of them if you do. Ingredients for 8 muffins (you can double the recipe for a loaf): For the caramelized layer: • 1/4 cup butter • 1/2 cup coconut sugar • 1 banana, sliced (~1cm thick) For the dough: • 1 mashed bananas • 1/3 cup unsweetened apple sauce • 1 egg • 1/3 cup plain, non-fat greek yogurt • 1/2 cup coconut sugar • 2 tsp baking powder • 1 cup whole wheat flour Instructions Preheat oven to 350°F. Grease your muffins pan. In a saucepan melt the butter and the coconut sugar over medium-low heat together until the mixture thickens a little, about 2 min (be careful to dont burn it). Coat the bottom of your muffins pan with the caramel. Place the sliced bananas on top of the caramel. For the dough, In a bowl, beat together the egg and the coconut sugar. Then add the mashed banana, applesauce and greek yogurt until combined. Add in the baking powder and stir in the flour, mix until combined. Pour the batter evenly on top of the bananas, and bake in the oven for 25 to 30 minutes, until a toothpick comes off clean and the edges start to turn brown. Warning: the melted caramel and banana smell is going to touch you in the heart. I told you I was literally obsessed with upside-down cakes 🙈. Those caramelized muffins are BOMB!!! The dough is 💯 Healthy so why not having fun on the toppings, right?

I could not stop eating it! It is one of those recipes you are proud of and so happy to share.

Serve them warm if you can... But I promise you'll eat all of them if you do.

Ingredients for 8 muffins (you can double the recipe for a loaf): For the caramelized layer:
• 1/4 cup butter
• 1/2 cup coconut sugar
• 1 banana, sliced (~1cm thick)

For the dough:
• 1 mashed bananas
• 1/3 cup unsweetened apple sauce
• 1 egg
• 1/3 cup plain, non-fat greek yogurt
• 1/2 cup coconut sugar
• 2 tsp baking powder
• 1 cup whole wheat flour

Instructions
Preheat oven to 350°F. 
Grease your muffins pan.

In a saucepan melt the butter and the coconut sugar over medium-low heat together until the mixture thickens a little, about 2 min (be careful to dont burn it). Coat the bottom of your muffins pan with the caramel. Place the sliced bananas on top of the caramel.

For the dough,
In a bowl, beat together the egg and the coconut sugar. Then add the mashed banana, applesauce and greek yogurt until combined. 
Add in the baking powder and stir in the flour, mix until combined.

Accountability picture second part of the day. The soup was good but those #portobellomushroom o_O I guess I forgot howmuch I love just #mushrooms and #garlic. I added the egg because the sprinkle of Serrano ham didn’t feel like enough protein for the meal and it was :) #yummi also, it felt like #soulfood after a crappy day and it is fairly #healthy and quick to make. #healthyfood #healthyrecipes. Microwaved Portobello Mushrooms -1/2 garlic cloves per mushroom - a teaspoon of minced serrano ham or chorizo (optional,. - a sprinkle of parsley - salt to taste and egg on top (also optional). Then microwave it all with some transparent film on top (or a microwaving protector) in blasts of 1 minute until the egg looks cooked and voila! #delicious

Si si si! Parecen y saben a oreos! Aquí les dejo la receta de estas deliciosas “oreos”. Low carb “oreo” cookie ^ Galleta: -1/2 taza de harina de almendras -6 cucharadas de azúcar de dieta -1 huevo -5 cucharadas de cacao en polvo sin azúcar -2 cucharadas de aceite vegetal (puede ser de aguacate) -1 cucharadita de extracto de vainilla -1/2 cucharadita de polvo de hornear -pizca de sal ^ Relleno: -1/2 taza de mantequilla -3 cucharadas de azúcar de dieta -2 cucharaditas de extracto de vainilla ^ *Mezclar el cacao en polvo con extracto de vainilla, azúcar y aceite. Agregar el huevo. *En otro recipiente mezclar la harina de almendras, el polvo de hornear y la sal. *Poner la mezcla de harina en el bowl de la mezcla del chocolate y mezclar con la mano. *Si la mezcla esta muy pegajosa, agregar un poco mas de harina y de azúcar y dejar reposando en la refri por 1-2 horas. *Para mas facil manejo de la masa, se la puede dividir en 4 y ahi amasarla y aplanarla para poder hacer el corte de las galletas. (Nothing!) 🍰 🧁🎂last week on my week off we went to Tintern, Wales and took a little day trip to visit Symonds Yat - check it out if you haven’t already as the views are just stunning ❤️ it can always be tough to find gluten free food on the go, especially sweet treats, so imagine my happiness + surprise + delight when they had a little cafe on site stocked up with all the gluten free cake I could imagine. I went for the lemon cake and ended up sharing lots as it was so so good. This weekend I overindulged in vegan cake @earthcakebristol with the lovely @foodbetheats - check out her page for a cake pic of dreams 🤗

5. Spray a regular-sized muffin pan with olive oil (or avocado oil), then evenly divide the batter among the muffin cups. Sprinkle a little cheese on top, then add a jalapeño slice on top for garnish.
6. Bake for 28 to 30 minutes, or until golden brown.  Allow the muffins to slightly cool before removing from the muffin tray.

Creamy chicken and wild rice bake - 612 calories . 75g (uncooked) wild rice; 80g frozen broccoli; 100g chicken breast; 1/2 an onion; 2 garlic cloves; 50g Tesco 50% less fat soft cheese; 100ml koko dairy free unsweetened coconut milk; 30g Pilgrim’s Choice lighter mature cheddar . Because sometimes, you just want a brownie...fast, here is my review of the Lakanto brownies! • If you are already low carb and low sugar, these will taste plenty sweet to you. If you’re not, you may want to add some @lakantosweetener granulated monkfruit to your batter (which i could hav eaten with a spoon on its own!!). • I enjoyed it, as you can see, with some @halotopcreamery vanilla maple dairy free ice cream and some coconut whipped cream! • Made with 2 eggs, per the package instructions, they’re a bit on the fudgy side. Made with 3 eggs, it’s suppose to yield a more cake-like consistency. • Both my girls still at home enjoyed them (although one said they weren’t sweet enough but she eats more sugar than the rest of us👀), as did my husband. • This is a total win, in my book, for a quick and easy treat! Hello friends! 🤗 Introducing another simple low carb AND vegan option - Stir fry! I love stir fry because they give you a great reason to cook up whatever medley of vegetables you’ve been hoarding in your fridge, AND you can whip up a good stir fry in 15-20 minutes in a single frying pan! Haha and I also like the irony of the name... because you literally fry everything and stir 🤷🏼‍♀️ . . I call this lovely dish - the fridge clean out! I used expired-yesterday baby carrots, some turning brown cabbage, partially soft zucchini, frozen edamame (for protein) and some extra onion and peppers that were left over from dinner a few nights ago! 💁🏼‍♀️ . . The lovely thing about stirfry is that it is SO customizable, you can eat it over rice or noodles, you can add an egg for extra protein, or some animal protein, and 9.5/10 times it will taste delicious! 🤤 . . Some tips on healthy flavouring for stir fry is to first sauté some garlic and ginger for flavour, use sesame oil to fry your vegetables in, and finish with some soy sauce! When you just need the basics. Oatmeal bowl for breakfast or lunch ... food is food 😍 I am one who hates food waste so for this meal, I used frozen strawberries that I had frozen. When I feel I am not going to use all my fruit, before it starts to turn, I use my food saver to package my fruit individually so that I can use it for future recipes. The foodsaver stores and freezes all types of food. In a small pot, I added the frozen strawberries with a couple of tablespoons of water, sauté till tender and add a drizzle of 🍯 Oatmeal bowl: steel cut oats, grass fed plain greek yogurt, hemp seeds and pistachios. The peanut butter drizzle was from Organic PBFit which I mixed with almond milk to get a creamy texture 😋 To make this vegan switch grass-fed yogurt to coconut or almond yogurt. Keto lessen oatmeal portion, leave out fruit and add more nuts like walnuts, almonds etc. Every meal can be modified to each persons meal plan. I’d call these any time of the day loaded corn tortillas. I added in a chipotle sauce to the beans for a smokey note and they were delicious. I could imagine the beans would be tasty on top of a jacket potato too.
