CAUSA LIMEÑA ○ an underrated dish of the peruvian cuisine, usually the ceviche takes all the fame, but this baby it’s just as good. They actually complement each other, for me they need to be together, because together they are the best version of themselves.

What is the causa you ask? It is a dish prepared with yellow potato in the form of a puree that is combined with aji amarillo (maybe lemon? not sure) and on top (or in the middle, as layers) a side of either tuna, chicken, seafood, you name it, often seasoned with mayonnaise, red onion, lemon and other goodies. That's not all, you top all of that with a sauce that comes from the heavens called "Salsa Huancaina" that is a cheesy aji amarillo mix, I am not really sure what it is, but it is A M A Z I N G. So well, I am not gonna give you the recipe here but you understood the drill and you now know you should go to a peruvian restaurant and devour some ceviche with causa.
