It’s been a long weekend of doing nothing but cooking, eating and exercising...ON REPEATS. This morning, I woke up and had an urge to get into a spirit of Christmas, so I made spiced pumpkin-coconut milk pancakes using a mix of soy • chickpea • whole wheat flours and gritty corn meal. And boy, was the texture just perfectly amazing. 😳 Might not the best in term of flavor, but the pancakes were gritty, crunchy on the edges, but soft and marshmallowy in the middle. Topped them with banana-coconut ice-cream, a touch of cinnamon and a dollop of yogurt: The morning was made 👌🏼
