I am trying to reduce my consumption of grains, especially refined grains. This sweet potato “rice” was part of today’s lunch and is a good way to substitute grain. I avoid eating grains during the week and restrict rice to weekends. Grains are not the best source of nutrition relative to other foods like vegetables, meats, fruits, nuts and seeds. They are generally higher in carbs and tend to have a high glycemic response. Also, the challenge with grains is that they typically crowd out the plate. We are prone to put calorie dense grains such as rice at the center of the plate, then place the veggies or meats as accompaniments. I recommend making the grain into a side and moving the veggies and meats to the center of the plate.
