I usually prep our lunches on Sunday for the following three days then prep again on Wednesday. I’m just not a huge fan of freezing meals. We’re having Mediterranean Chicken and cauliflower “Tabbouleh” with lemon for lunch this week. . Ingredients ๐Ÿ›’ 9 chicken thighs 1tsp thyme 1tsp oregano Salt and pepper 1tbsp olive oil Zest of 1 lemon Juice of 1 lemon 1 cup of parsley 1/3 cup mint 1/2 head cauliflower 1 cucumber 1/2 red onion 6 cherry tomatoes . Finished R1 2/5/19 felt so amazing, really like the best I’ve EVER felt!! Then... I had a very very busy 2 weeks and as much as I tried to stay compliant and do the reintroduction as suggested in the book... I slowly fell off...COMPLETELY. My mood isn’t as great, my energy has lowered, my back pain seems to be returning and I don’t want to find out what else. So... Found myself in unfamiliar territory for breakfast ...screaming child (not mine) wanted McDonalds and there was no way around it, so girlfriend and I just met there for breakfast. I had 2x sausage patties, 2x bacon, cheese and an egg ....with a long black of course. It was suprisingly scrumptious.

Bacon wrapped filet with roasted peppers and butternut squash. It’s was amazing and the bonus is that It’s SCD- LowFOD map friendly. I think I am getting the hang of this restricted diet ๐Ÿ™Œ๐Ÿป. To be compliant I used Hempler’s uncured bacon. This meal is no dairy, no gluten, no grains, no soy, no onion, no garlic, no added sugar...and a whole lot of fun. I am 3 1/2 weeks in and really turning a corner feeling more energetic, while I am not even halfway on this journey to my new found gut health..I am pleased with the progress. โœจโœจโœจโœจโœจโœจโœจโœจโœจโœจโœจ If I have any advice for anyone struggling with an undiagnosed illness, it would be to be your own biggest advocate for your health. ๐ŸŠCooking Adventures ๐ŸŠ Excited to try out a new type of miso today. Mugi miso (barley miso) @naturesglorysg made with only 5 ingredients and fermented for 18 months. The longer fermentation increases protein and probiotics levels as compared to other sweeter white misos. This makes this miso good for people with gut or digestion problems. ๐Ÿ‘๐Ÿป๐Ÿ‘๐Ÿป _______________________________________________________ 1. Low carb rice with garlic miso dip Inspired by the korean ๐Ÿ‡ฐ๐Ÿ‡ท dish - Kongnamul bap. It’s basically rice cooked with soy bean sprouts and served with a spicy dip. I chose smaller bean sprouts , our local Tau Ghey instead and added some korean mushrooms ๐Ÿ„. Also did away with a spicy dip. Instead I stir-fried minced garlic and chopped spring onions in the remnants of salmon oil and then quickly stirred in mugi and shiro miso at the very end. ๐Ÿคค๐Ÿคค (swipe to see) 2. Pan-fried salmon ๐ŸŸ Crispy skin, oily goodness. Really love the quality of fish from @kuhlbarra. No salt needed ๐Ÿ˜‰๐Ÿ˜‰. As you can tell by the meal presentation in this picture, I am by no means a “foodie.” With that said, we do at least try to be “whole” food/“real” food consumers at our house. In an effort to be #whole30 food consumers, a mainstay for breakfast is scrambled eggs. AND presently my new favs for breakfast is scrambled eggs fried up with some sort of dinner leftover concoction. However, I recently had this weird moral dilemma as I ate scrambled eggs with leftover bacon wrapped chicken thighs. I felt like some sort of crazy savage eating a momma and her babies all at the same time. My husband made me a paleo birthday cake. ๐Ÿ˜ My favorite cake is red velvet but since I have been eliminating gluten the cake from my favorite bakery was out this year ๐Ÿ˜• so he tried a paleo recipe we found and baked it today while I was running errands. He had some challenges like he discovered we didn’t have red coloring so he made it green and he had a little trouble the “cream cheese” cashew icing . It may not have looked pretty and the consistency was off but the taste was really good for a #glutenfree #refinedsugarfree #dairyfree cake. I think we will try some other recipes we are new to paleo baking. ( any recommendations ?) Also tonight we made delicious burgers, paleo hot dog and homemade sweet potato fries. I usually have a lettuce bun but splurged for an @udisglutenfree bun it was perfect! Do you even really remember the feeling you got from that piece of pizza or bag of candy you ate? If you forgot, just look down at your stomach, it might refresh your memory. Food is one of those things that when it's over, it's fucking over. All the enjoyment you got from it is gone, like you literally have nothing positive to show for it, but you keep all the negatives that come with that moment. # When you eat poorly, assuming you want to be physically fit, you have to pay that back in the form of discipline and time. You don't just get to eat whatever you want and look how you want. # The best way I've learned to control this is to remind myself that it just doesn't last. When it's over, it's over but all the shit that comes with it stays. It's like fat debt. You spend all this "money" by eating whatever you want, but like real life debt, you have to pay it back. You don't just get to spend whatever you want in life and not pay it back. When you look in the mirror, or down, you see all the "money" you owe, just remember all those "purchases" are long gone but you still gotta pay it back. Like it's so much worse than actually buying things, because you actually get to keep things. You have unnecessary things you have around the house that you can, at the very least, sell later when you realize you didn't need it, but diet doesn't work like that. Food is like going out to the bars every weekend, you're looking for this temporary enjoyment that only spends your time and money in exchange for like 3 hours of fun, and then you go out the next weekend and do the same thing because the feeling doesn't last # Start thinking about if the things you do actually last. Are you moving forward, or backward? Are you looking and feeling better and better, or worse and worse each week. We only get one life as far as we all know, start acting like it
