So I try to be a good ambassador for the movement and show that I am grateful for whatever they are able to serve me, even if it’s just some boiled vegetables.\Animal welfare - yes. In fact, I secretly mistrust all four-legged / furry / two-winged / feathered / shelled ar scaly brothers and sisters. If I were them, I would by now be plotting ultimate revenge on a scale previously unknown to man. ... I stick to a vegan diet only for reasons of self-preservertion. Call it insurance. This Vegan Power Oat recipe is a perfect everyday breakfast.🍽 It is very filling and lasts for the whole morning. Additionally it is a great source of protein💪, omega-3s, fiber, iron and zinc.
Soaking your oats the night before will increase the bioavailabilty of nutrients.
1 cup rolled oats
1 cup spelt flakes
1 tbsp ground flax seeds
3 dates, chopped
1 tsp ground cinnamon
1 tsp ground cardamom
1 cup plant drink
1 tsp apple cider vinegar (optional)
1 tbsp buckwheat groats (optional)
Instructions 👨🍳 1. Add the rolled oats, spelt flakes, ground flax seeds and plant drink to a bowl the night before and let it sit until next morning. To improve digestibility, add apple cider vinegar and buckwheat groats to the bowl for soaking.
2. On the next morning, add the cinnamon, cardamom, chopped dates and banana🍌 and enjoy your vegan power oats!
3. Alternatively, you can add all ingredients into a blender to create a tasty smoothie.

Quick Ramen Stir-fry for lunch & dinner last night! With all the Christmas cookies I’ve been baking (20 DOZEN to be exact)... I haven’t really been motivated to cook. Go figure? I know! This took less than 30 mins to make and it was amazing! Here’s how you can recreate it! 👇🏽
Let’s get Saucey:
In a medium sized mixing bowl add
1 -10 oz can of Full Fat coconut milk
2 tbsp siracha
1 tbsp chili paste
Half lime squeezed
In a hot skillet add:
1 cubed tofu seasoned (garlic, ginger, turmeric, smoked paprika)
Cook for 4-5 minutes. Move tofu to the outer edge of skillet. Add 1 bag frozen veggies (I used a cauli-broc-carrot mix). While that cooks cut up baby Bella mushrooms(about 1 cup), 1 small bell pepper (I used orange). Add 1 can bamboo shoots and 1 can of water chestnuts(sliced). Cover with lid and allow to simmer (4-5 mins). Add sauce, cover and simmer 5 mins. While that simmers and flavors marry, start to boil a medium sized pot of water. Once it reaches a hard boil add Ramen noodles. Take of heat and cover till noodles reach desired consistency (3 mins). Using tongs portion out noodles into a bowl and top with stir-fry.
