IMPROV SEMIFREDDO. Somehow we've stumbled into a new tradition at home. Whenever it's time for the little one's bubble-and-all-you-can-drink-from-the-tub bath she orders me into the kitchen to prepare dessert for her. That means I have about 20 mins to conjure up something out of thin air. And so I reach for some dairy products, nuts, fruit, and/or chocolate and whip up a shot-sized portion for her. Tonight it turned into this creamy chocolate semifreddo.
Here's how I think I did it (serves 3-4 people): Melt 80 grams of dark choc along with two large teaspoons of condensed milk. Remove from the heat and gently but quickly stir in two egg yolks, followed by the zest of one mandarine and a3-4 tbsp of cold yoghurt. Whip about 1,5 decilitres cream and fold into the chocolate mixture. Pour into a variety of glass vessels and freeze for 30-40 mins (needless to say, the little one's was hardly "freddo" at all but mine was after she'd been tucked in).
