Coconut ice cream served in a coconut with fresh coconut meat then roasted peanuts sprinkled on top. Yes please. A few weeks ago I held a vegan cooking workshop at my place. It was fun and the first of many. Went to @veganburgzfortitude_valley tonight with Dan for the first time in forever. Dan got the Ribwich with a matcha bun (not GF). It even made it to his top 3 fav vegan burgers! Full of yummy BBQy goodness ๐Ÿ”๐Ÿ’–. . I got the Sweet Kale-roline minus the onion rings. Their GF bun is amazing, it looks like real bread and tastes pretty close as well ๐Ÿ˜ I really enjoyed the sweet potato pattie and the team even put fresh oil in their fryers so that their was no cross contamination for my chips and pattie. I love some good ๐ŸŸ! . Our milkshakes were a refreshing addition made with soy milk (Pure Harvest) so was gluten free too. Have you tried this place yet? What’s your fav menu item? Nothing like a delicious and spicy red lentil stew to warm up during the winter months! 1. Sauté 3 cloves garlic, 1/2 an onion, and some dried/ fresh chili for extra heat in 1 tbsp olive oil + 2 tsp salt + 1 tsp pepper + 2 tsp curry powder + 1 tsp turmeric + 1 tsp chili powder 2. Add in 1 diced potato and 2 diced tomatoes. Let them cook until the potato is golden. 3. Add 1/2 cup water if the potatoes start sticking to the pan. 4. Add in 2.5 cups of vegetable broth (store bought or home made). 5. Add 3/4 cup red lentils. Let the lentils boil until they turn yellowish. 6. Add in as much spinach as you like, bearing in mind that spinach wilts super fast, so you might want to add more than you anticipated needing! 7. Serve hot with some whole wheat bread or by itself! This recipe was inspired by an #ethiopian dish called #redlentilstew that uses #berberespice. I opted to use my #srilankan curry powder instead to make the flavor profile feel more familiar. Nachdem ihr den Teig schön geknetet habt und zu einer glatten Kugel geformt habt, wickelt ihr ihn in Folie und lasst ihn mindestens 30 Minuten im Kühlschrank ruhen. Danach wird der Teig gleichmäßig auf einem Blech ausgerollt und leicht mit der Konfitüre bestrichen. Für den Belag bringt ihr Margarine und Zucker zum schmelzen, Mandeln hinzufügen und mit der Mandelmilch zu einer Masse verrühren. Die Mandelmilch dickt die Masse zusätzlich an. ๐ŸŒฑ SATURDAY BREAKFAST BOWL ๐ŸŒฑ Due to a metabolic disorder, I want to gradually reduce the amount of carbohydrates in my meals. A further goal is that the carbohydrates present in my food come from a healthy source (whole grain, with high content of fiber). I don't want to ban the carbohydrates from my life, but I want to consume them more consciously. I think time off is so important... I was really not enjoying my degree and had very little motivation to actually want to carry on. However I’m back now and feeling a lot more hopeful that I’ll be able to successfully get through these next few months without losing my mind ๐Ÿ˜‚. If this year has taught me anything... it’s how much I love and appreciate medicine. Gimme an OSCE and a couple of hundred MCQ’s any day ๐Ÿ˜…๐Ÿ™Œ. • Anyway, on to the main topic.... this beautiful tofu harissa salad is definitely going to become a staple of mine over the next few months. Not only is it amazingly quick and easy to prepare, but the spicy chilli & harissa, smoked tomatoes, sweet pomegranate and sour lemon juice flavours come together like an absolute DREAM. Happy Saturday ๐ŸŒžโœจ Do you like combining warm oatmeal with cold yogurt? I LOVE it! Especially when there are warm blueberries included too. To make this jar I simply soaked fine oats (+ 1/2 grated apple, 1 tbs chia seeds and 1 tsp cinnamon) in boiling/hot water for five to ten minutes and then layered it with soy yogurt and blueberries (which I warmed up on the stove until they were saucy). It's so, so good, you need to try it! I am actually eating oatmeal with yogurt and berries right now but it's not nearly as pretty today! Enjoy your weekend ๐ŸŒŸ . Einen schönen Samstag zusammen ๐ŸŒžโœจ Warmer Haferbrei und kalter Joghurt - yay oder nay? Ich LIEBE die Kombi, vor allem wenn auch noch warme Beeren dabei sind. Ich habe hierfür einfach zarte Haferflocken (+ 1/2 geraspelter Apfel, 1 EL Chiasamen und 1 TL Zimt) mit kochendem Wasser übergossen und 5-10 Minuten ziehen lassen. Bei diesem traumhaften Wochenend-Wetter โ˜€๏ธ hat man gleich Lust auf ein cremiges Eis. ๐Ÿฆ Das vegane Chocolate Peanutbutter Eis ๐Ÿฅœ kommt hier goldrichtig. โ˜€๏ธ @nelia_142_x Zutaten: Ergibt ca. 1000 ml Eis (ca. 10 Kugeln) • 225 ml Sojamilch • 1 EL Stärkemehl • 300 ml Sojasahne • 55 ml Agavendicksaft • 80g Kakaopulver • 100g dunkle Schokolade (Kakaogehalt 50 – 60%) • 1 TL Vanilleextrakt • 120g Erdnussbutter mit Stückchen Zubereitung: In einer kleinen Schüssel 25 ml der Sojamilch mit dem Stärkemehl verrühren und beiseite stellen. Die restliche Sojamilch mit Sojasahne, Agavendicksaft und Kakaopulver in einem großen Topf vermischen. Die Schokolade in kleine Stücke brechen und unterrühren. Bei mittlerer Hitze unter ständigem Rühren aufkochen. Da der Agavendicksaft schnell anbrennt, sollte konstant gerührt werden. Sobald die Mischung aufsteigt, vom Herd nehmen. Anxiety more often than not, I find, is the fear of the uncontrollable and the fear of the unknown. I find peace in consciously thinking about what I'm buying and consuming. I love researching certain foods for hours and not just knowing WHAT'S good for me but HOW it's good for me. Anyone else have a #healthy obssesion with Food? #unpopularopinion fats are great! Did you know alot of vitamins and minerals are fat soluble? Meaning our body's can only absorb or best absorb certain V&M's when accompanied with a fat source. My favourite is avocado ๐Ÿฅ‘ despite its bad rep for being "fattening" if you replace bad fats with this wee gem you'll find the opposite can be true, and if you are after the gains just eat more ๐Ÿฅ‘๐Ÿฅ‘๐Ÿ’ช P.s don't forget some things are water soluble too, so eat more (better!) Fats and drink your water!

Anxiety more often than not, I find, is the fear of the uncontrollable and the fear of the unknown. Food for me is a huge anxiety relief or distraction as it is something I can easily control, I love making my own meals and KNOWING what I'm putting into my body.
