Happy weekend everyone! As you all know I do like my chocolate and even though I eat very clean most of the time Im all for a treat now and then in fact I think its essential to have treats in order to maintain a healthy diet. I always try to come up with healthy alternatives for you all! I absolutely love the chocolate pecan combo so I come up with these heavenly chocolate pecan muffins with chocolate cashew frosting! So soft, rich and delicious! You must try😍 Let me know what you think😉  Recipe;
1 cup of spelt flour
1/2 cup of maple syrup
1/2 cup of coconut butter or oil
2 eggs or flax eggs ( 2 tbs of ground flax soaked in 6 tbs of water for 10 minutes)
1/2 cup of raw cacao powder
1 tbs of vanilla extract
1/2 tsp of baking soda
3/4 tsp baking powder
1/2 cup of chopped pecan nuts

Preheat oven to 160c and grease the muffin tins. Prepare your flax eggs and allow to sit for 10 mins. Place coconut butter in a bowl at room temperature so its soft and creamy. Stir in the whisked eggs or flax eggs, maple syrup, vanilla, baking powder, cacao powder and whisk ingredients together. Then add the flour and pecan nuts. Make sure you have a good batter ( add a tbs of almond milk if too dry) and scoop mixture into muffin tins. Dont fill them too high because they will rise. Bake for 25-30 mins. Allow to cool while you prepare frosting.
Creamy chocolate cashew butter frosting;
1 cup of soaked cashew nuts ( 3-4 hours should be enough )
3 tbs of melted coconut oil
4 tbs of maple syrup
1 1/2 tbs of vanilla bean paste
1 tbs of raw cacao powder ( I use @superfoodiesuk )
5-6 tbs of water or nut milk to use during blending.
Add all ingredients into a high powered blender and pulse adding a little of the water/my ok at a time to help with the smoothness while blending. Once blended into a cream like texture transfer into a cup and place in the freezer to harden up for an hour or so. Once thick spread on top of the cooled muffins and sprinkled with chopped hazelnuts and a pecan nut. Enjoy!

It was a very good day today. I feld really good and I could do a lot in the house. Bing able to do things away that I no longer use. Tidy and disposed of drawers and cupboards and clean it. So me a very happy girl😀 the rest I wil do the rest of the week.

What I at today is raw sushi. I am not a big fan of this to be honest. I very much love sushi but the raw nori sheets is so chewy and chewing but what wad in it is was delicious.

Shusi: a day Before I put a half cauliflower in the freezer. First thing in the morning finely chop a piece of cucumber together with a small piece if onion in a litlle bowl. Put 2 tablespoon of vinnegar 1 teaspoon of curcuma 1 teaspoon maple mixed wel an leave it all day. Take the cauliflower  out  half our before you start. In the blender with 1 lemon 2 garlic 1 tablespoon Hindustan curry (massala) salt and pepper to tasted.  Blend till you have a puree. Stir the little bowl mix in. Than rake your nori sheet with whatever you like. I had red lettuce 4 types of sprouts and arugula and the cauliflower ofcourse.
Very tasty the Orgine recipe is with potato that you make in a wok with the rest.

Breakfast was 300 Gr banana with 300 strawberry for Got the dates but it was oke.

Lunch mango and orange/grapefruit and lime.
