Toro is given to the Bluefin's underbelly meat because of its high fat content, loaded with omega 3. Because the melting temperature of the fat in the Toro is lower than human body temperature, this cut of fish, when placed raw on the tongue, actually melts, dissolving almost completely. 
Bluefin's Toro-keru offers two cuts: Chutoro and Otoro. Otoro is the fattiest, tastiest and the priciest cut of the Bluefin tuna. This particular cut of Otoro is one of the most beautiful cuts I have ever seen. It is a Yin and Yang of sorts. #eatwell 👊👊👊

Morocco is a country stuffed full of culinary tradition, blending strains of Mediterranean, Arabic, French, Spanish and Berber flavors that reflect centuries of colonial and indigenous co-mingling. Its food has an incredibly distinct flavor profile, probably due to the number and combination of spices used. It’s relatively easy to make, even if you don’t have a clay oven or an heirloom tagine. And unlike some of the buttery, greasy, meat-stuffed foods of western Europe, it’s pretty healthy. I spent a couple of weeks hanging around Casablanca recently, dipping over into the medina of Fez and then down to Merzouga on the edge of the Sahara. Not only was it hot as balls, I was able to pick up an incredible spice blend (more on this later) and taste the region’s culinary layering firsthand. Now back home again in Indiana, I’m gonna try to whip up some recipes from the great African Northwest myself and share the results. Hang on to your tagelmust, we’re about to hit the dunes….
