People speak about kunafa in reverential tones. Like an overzealous convert their eyes shine with conviction and they get a dreamy look on their faces as they try to explain their obsession. While to the uninitiated this smacks of histrionics, I make no apologies for being in their ranks. If I had to pick my ultimate dessert, it would be this (made well). Clarified butter soaked vermicelli- like pastry lovingly surrounds a luscious creamy cheese filling. It’s served hot and soaked in syrup. Paradise.

Knafa is probably the most popular Arab dessert. I mean, can you blame us? I had never made knafa before and thought it was the hardest thing ever.
